This is one of our all-time favourite meals. It’s healthy and can be made anywhere, inside or out. It is great for brunch, lunch, or dinner.
BBQ Shrimp Rice Bowl
Ingredients (Serves 2-3)
• 1 cup Mexican rice, cooked (store-bought or homemade)
• 1 can black beans (540 mL), drained and rinsed
• 400 g shrimp, peeled and deveined
• 2 tablespoons Dunn Right Sauce (plus extra for drizzling)
• 1 tbsp olive oil
• 1 ripe avocado, sliced

Instructions
1. Prep the Shrimp – Pat the shrimp dry with a paper towel. Toss them in a bowl with olive oil and 2 tablespoons Dunn Right Sauce until evenly coated.
2. Cook the Shrimp – Heat a skillet over medium-high heat. Add shrimp in a single layer. Cook for 2-3 minutes per side or until pink and opaque. Remove from heat. The shrimp can also be cooked on the BBQ
3. Warm the Beans – In a small saucepan, heat black beans over medium-low until warmed through.
4. Assemble the Bowls – Divide cooked Mexican rice between bowls. Top with warm black beans, BBQ shrimp, and sliced avocado.
5. Finish and Serve – Drizzle extra Dunn Right Sauce over the shrimp for added flavour and serve with lime wedges on the side.
